Mangorummy Lassi

I got an indian take-away for dinner tonight. I love going to the little stall at Bar Bar along Bt Timah, the best indian food in Singapore. Delicious! So before placing my aromatic rojan gosh and garlic nann on the plate, I decided to make myself an accompanying drink. Something good for digestion and something to wind down the evening with.

A mangorummy lassi = lassi + rum

Ingredients
200g of natural yogurt, plain
1 fresh mango, peeled and de-seeded
25ml dark rum
Handful of ice

In a blender, add in the yogurt, fresh mango and ice, whizz.
Pour in the rum and mix.
Pour into large glass.
Enjoy!

I am pleasantly surprise how well rum goes with mango and the yogurt. Its really tasty and even feels good for you...

White Wine Sangria

Anyone who likes fruit, put your hands up! I like, love and adore fruits, especially when it is in some kind of drink... like a margarita, a martini, pina colada... you know the type.

Today, instead of making a typical fruit cocktail, I have done a white wine sangria. Not sure if it is classified as a cocktail but in my books, it does!

Ingredients
A good bottle of white wine, I use sauvignon blanc
Small splash of ginger ale
A selection of your favorite fruits (roughly chopped), I recommend using apples, peaches, kiwis and melons
Mint leaves, pressed and torn

This is so simple, just place the fruits and mint leaves in a glass or a jug.
Add in a splash of ginger ale if using a glass or fill the jug up to 1/6 with ginger ale.
Top up with wine.

There you go, easy, breezy white wine sangria!
Have a great weekend ahead.

Chocolate Martini

I had dinner with Suzy yesterday evening and as usual, we had a blast. She took me to try out this cozy yakitori restaurant on the 5th floor of Far East Plaza and it was yummy! Suzy and I go back a few years. We met at work while I was posted abroad and she had just come back to Singapore after living in Paris for a couple of years. So, being two Singaporeans working for a French company, I guess it was natural that we started to stick together when we met at common meetings or seminars overseas. She became my familiar face and the closest link I had to home.

In those days, I would sometimes come back for ad-hoc assignments and share Suzy's huge office room (you could fit an army in there). Typically, I would start at 9am and work till I was frustrated and desperate a drink.... which conveniently would be at 4.30pm. Just in time to drag Suzy to Morton's at Mandarin Oriental for their free flow of steak sandwiches while sipping their famous martinis. It was also at Morton's that I drank my first ever chocolate martini! So today, I tried to re-make this delicious concoction... tailored to my taste.

All gone in a gulp!
Ingredients
25ml vodka
50ml chocolate liqueur (I used my favorite chocolate grappa)
Cinnamon stick (option)
Ice cubes
Cocktail shaker

Put the ice into the cocktail shaker.
Pour in the vodka and chocolate liqueur.
Shake.
Strain into a martini glass.
Add a cinnamon stick for an extra flavour, optional.

Have a great weekend ahead! xx

Cocktail of the Week

MOJITO
I used a bottle for my mojitos (yes, I drink a lot). If you do too, adjust recipe by increasing the ingredients 5 times.
This week flew by for me and I am so glad it is almost the weekend. Not is it any weekend, but is the weekend before the Deepavali holiday, next friday! Whhooppee! I know most of you will be zooming off somewhere, the long weekend is a fantastic period to go for that long deserved holiday. Besides, the year is coming to a close, so let down your hair and have some fun!

Well, before all that, let us just enjoy this weekend with a refreshing mojito to perk up your day.

A mint sprig
Ingredients
A good handful of mint sprigs
50ml golden rum
2 tablespoons of sugar syrup
Soda water to top up
A squeeze of lime juice

Prepare the sugar syrup first by mixing 1.5 tablespoons of sugar with 50ml of hot water, set aside.
Put the mint sprigs into a tall glass and add the rum, lime juice and sugar syrup.
Use the base of a spoon and brush the mint sprigs to release its flavours.
Add crushed ice and stir vigorously.
Top up with soda water and stir again.
Serve with a straw.

Have a great weekend ahead and start packing that holiday bag!

Cocktail of the Week

LYCHEE MARTINI
I did not have a privileged childhood. While my classmates at school were talking about the latest flavours of ice-cream or cakes that their parents had bought the night before, I was wondering when mum would finally open that can of lychees that had been sitting in the fridge for months.

"It is for a special occasion," she would say. Usually, it was to celebrate good grades for my exams at the end of each semester. So when I found the existence of lychee martinis in my adulthood, I naturally associated them with celebrations. It became my celebratory drink!

And what am I celebrating this week? My husband came in 16th place out of the hundreds of participants in the 'Tour de Bintan' over the past weekend. That is a wonderful reason to have at least a can of lychees opened right?

Ingredients
25ml vodka
25ml lychee liqueur, I use Bols
2 pieces of lychees per glass of martini (fresh or can is fine)
Cocktail sticks
Cocktail shaker
Ice

Fill the cocktail shaker with ice
Pour in the vodka and liqueur into shaker
Shake!
Strain the mixture into a martini glass
Pierce 2 lychees into a cocktail stick
Pour into chilled martini glass
Have a brilliant week ahead!

Gin and Tonic

A gin and tonic is one of my simple pleasures in life. It is not too sweet or heavy and no one will judge you when you start ordering it before the sun goes down. It tastes of a lazy sunday afternoon, a drink to be enjoyed while reading a book with your toes dipped in the swimming pool.

Ingredients
50ml dry gin
Tonic water to top up
A quarter of green lemon
A handful of fresh peppermint leaves
Ice
Crush the peppermint leaves to release the flavours and put into cup
Add ice
Add gin and top up with tonic water
Add the lemon juice and throw in the husk
Stir and enjoy!

Have a fabulous weekend ahead!
