LYCHEE MARTINI
I did not have a privileged childhood. While my classmates at school were talking about the latest flavours of ice-cream or cakes that their parents had bought the night before, I was wondering when mum would finally open that can of lychees that had been sitting in the fridge for months."It is for a special occasion," she would say. Usually, it was to celebrate good grades for my exams at the end of each semester. So when I found the existence of lychee martinis in my adulthood, I naturally associated them with celebrations. It became my celebratory drink!
And what am I celebrating this week? My husband came in 16th place out of the hundreds of participants in the 'Tour de Bintan' over the past weekend. That is a wonderful reason to have at least a can of lychees opened right?
Ingredients
25ml vodka
25ml lychee liqueur, I use Bols
2 pieces of lychees per glass of martini (fresh or can is fine)
Cocktail sticks
Cocktail shaker
Ice
Fill the cocktail shaker with ice
Pour in the vodka and liqueur into shaker
Shake!
Strain the mixture into a martini glass
Pierce 2 lychees into a cocktail stick
Pour into chilled martini glass
