Coco-Kiwi

What a treat to have fruits for dessert. And it's healthy too! And with so many different colours, textures and tastes on offer, the possibilities are endless.

This is currently my favourite dessert at the moment. It looks so good. And tastes great too! Yums.

The richness of the coconut cream together with the tartness of kiwi fruits. The cracking of kiwi seeds as you chew adds a dimension of fun. A friend told me that her daughter loves kiwi fruits because there are cute little ants inside.

It will definitely be hard to keep the ants away from this coco-kiwi!


Coco-Kiwi - serves 4

Ingredients
300ml coconut cream
300ml low fat yoghurt
2 teaspoons of caster sugar
Vanilla essence

3 kiwi fruits, diced

Preparation time: 20 mins
Cooking time: None required
Level of difficulty: Easy peasy

Mix the coconut cream and low fat yoghurt together in a mixing bowl.
Add sugar and a few drops of vanilla essence. Spoon into 4 low glasses and refrigerate.

Top with diced kiwi fruits just before serving. You may use yellow kiwis instead for a sweeter taste. Or a mix of 2 grren, 2 yellow kiwis for a more interesting presentation.
